CHANTELLE NICHOLSON
CHEF OWNER

Multi-award-winning chef Chantelle is the former chef-owner of Tredwells (the recipient of a green Michelin star in 2021) and All’s Well, a ‘pandemic pop-up’, with Apricity opening in Mayfair in April 2022. As one of the leading female voices in the UK’s hospitality industry, Chantelle is an advocate for seasonality and sustainability, championing veg-forward cooking and committed to creating a more sustainable future across her operation and activities. She's also an independent board member for ReLondon, a Food Council member for City Harvest and author of Planted. More about Chantelle

EVE SEEMANN
HEAD CHEF

Former Head Chef of Tredwells, Eve, completed her degree in Cinema and Philosophy in Sorbonne, Paris, spending time in London before moving here after graduating. She quickly moved through various hospitality roles after starting as a bartender in London in 2004 and crossed over into a kitchen role as Commis Chef at Sheraton Park Lane. This is where her passion for cooking shone through. 

 

Fast forward through a decade of hard work, long hours and a great deal of learning, she’s reached a point in her career where she's able to utilise her knowledge and experience to work towards a sustainable and zero waste style of cooking.

FRANKIE COBOS
RESTAURANT MANAGER 

Originally from Córdoba in Southern Spain, Frankie made the move to London in summer 2011. He met Chantelle in September the same year, and it was she who planted the seed that inspired Frankie to carve out a career in hospitality.

 

He worked across a number of various roles alongside Chantelle, before parting ways to join Soho House in 2017. Fast forward five years and some valuable managerial experience, he returned to join the opening team for Apricity in 2022 where he has been delighting our guests with his charm ever since.

His mother always encouraged him to follow a career in hospitality and to attend hospitality school but he always refused. Just look at him now!

ZOÉ DONADIO
ASSISTANT RESTAURANT MANAGER 

Zoé began bartending in a neighborhood cocktail bar in Peckham while studying at Goldsmiths and quickly fell in love with the craft, pursuing it after graduation. She led teams at various independent bars across South East London before transitioning to wine and cocktail development at Silver Lining in 2020. Zoé later managed the natural wine cellar La Cave at the Hoxton and now heads the drinks program at Apricity, focusing on organic and biodynamic selections that emphasize terroir and sustainability.

 

A passionate advocate for diversity in hospitality, Zoé co-runs ThreeAfter3, a feminist bartending collective that creates opportunities, education, and events to uplift women in the service industry.

Sasha Breens-Portier, Junior Sous Chef,

SASHA BREENS-PORTIER
JUNIOR SOUS CHEF

Chef Sasha’s journey to becoming a chef began in Wiltshire, where she grew up immersed in the lively atmosphere of pubs and her family's bed-and-breakfast. This upbringing sparked an early appreciation for hospitality and a love for food. At 17, Sasha left the countryside to pursue her cookery studies at the Royal Academy of Culinary Arts, going on to work at a number of classical London restaurants following her graduation. 

 

It was her time in more traditional restaurants that led her to seek out restaurants prioritising more sustainable operations, leading her to Apricity where she joined us a year after our opening, drawn to our low-waste mission and circular ethos.

 

Our head-chef of speaking in puns, when she's not in the kitchen you'll find Sasha co-captaining her rugby team at Barnes RFC. 

MILLIE CHARRINGTON
JUNIOR SOUS CHEF 

Millie began working as a chef in 2020, having spent 6 years post university living in the French Alps, working in bars, a ski school and managing communications and operations for a local environmental non-profit.

 

After moving back to the UK and realising she wanted to pursue a career in the kitchen, she trained as an apprentice at Westminster Kingsway College while working at the Cavalry & Guards Club in Mayfair.

 

Her passion for innovative, sustainable and seasonal cooking brought her to Apricity in March 2023.
