I’m thrilled to share some exciting news — the next evolution of the journey in conscious dining has found its home in Copenhagen. Fjora, now open at the stunning, nature-led 1 Hotel Copenhagen, is a celebration of nature, seasonality, and connection — a reflection of the landscapes that inspire us and the people who bring them to life.
Copenhagen’s deep-rooted respect for the environment and its vibrant food community make it the perfect place to explore how we can nourish both people and planet. At Fjora, we’ll be working closely with local growers, foragers, and makers, allowing the rhythm of the seasons and the richness of Danish produce to guide our menu. I’m incredibly grateful to be partnering with 1 Hotel, whose ethos aligns so naturally with mine.
This is more than just a new restaurant — it’s an opportunity to collaborate, to learn, and to continue evolving what thoughtful, delicious food can be. I'm super excited to be on this journey and hope to be able to welcome some of you to Fjora soon.
