It's always been a dream of mine to have a wine that is truly connected to the restaurant. So I'm so happy to have been able to collaborate with 2 wonderful souls for this dream to come to life.
I've known Angelo Van Dyk for a number of years now, I think when I had All's Well in London Fields (a brief-ish, Covid labour of love). His kindness, passion and positive energy just emanated from him. And the Wasted Wine Club wine was indeed delicious. So when the opportunity arose to collaborate on something special, I jumped at it.
This 2024 blend—an artful mix of Riesling, Kerner, Müller-Thurgau, Sauvignon Blanc, and several hybrids—was born from an abundant harvest and a shared desire to transform surplus into something expressive and joyful. Harvested from the steep, slate-rich slopes of the Mosel, this wine reflects both the region’s deep-rooted traditions and its forward-thinking spirit. While Riesling remains the emblem of the Mosel, winemakers like Kosie van der Merwe and Jan Matthias Klein of the historic Staffelter Hof estate are committed to organic and regenerative farming.
A South African pioneer of biodynamic viticulture, Kosie brings his boundary-pushing energy to Germany, working with Jan Matthias to explore how sustainability and creativity can thrive together.
